Ingredients:

• 2 medium zucchinis (sliced)

• 2 medium yellow squash (sliced)

• 2 medium ripe tomatoes (sliced)

• 2 cloves garlic (minced)

• 2 tbsp olive oil

• 1 tsp dried Italian seasoning

• Salt & black pepper (to taste)

• 1/4 cup grated Parmesan cheese

Preheat the oven to 425°F (220°C).

Line a baking sheet with parchment paper.

Arrange zucchini, squash, and tomato slices in a single layer.

Drizzle with olive oil and sprinkle minced garlic over the veggies.

Season with salt, pepper, and Italian seasoning .
