8 lamb chops (loin or rib)

2 tbsp olive oil

4 garlic cloves (minced)

1 tbsp fresh rosemary (or 1 tsp dried)

1 tbsp fresh thyme (or 1 tsp dried)

1 tsp salt

½ tsp black pepper

1 tbsp lemon juice (optional for a hint of brightness)

Optional Marinade (for extra flavor):

Marinate for 1–4 hours before baking

¼ cup olive oil

Juice of 1 lemon

4 garlic cloves, minced

1 tbsp each rosemary and thyme

Salt and pepper to taste

1. Preheat Oven: Set oven to 400°F (200°C).

2. Prepare Chops: Pat lamb chops dry with paper towels. Rub both sides with olive oil, garlic, herbs, salt, and pepper.

3. Optional Sear (for extra flavor):

Heat a skillet over high heat.

Sear lamb chops for 1–2 minutes per side until browned. This locks in flavor.

4. Bake:

Place chops on a foil-lined baking tray or in an oven-safe skillet.

Bake for 10–15 minutes (depending on thickness and desired doneness):

Rare: 120–125°F (49–52°C)

Medium-Rare: 130–135°F (54–57°C)

Medium: 140–145°F (60–63°C)

5. Rest:

Remove from oven and let rest for 5 minutes before serving.
