2 boneless, skinless chicken breasts

12 large shrimp, peeled and deveined

4 medium sweet potatoes, peeled and cut into chunks

3 large carrots, peeled and cut into chunks

3 tablespoons olive oil

1 tablespoon honey

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

1️⃣ Prepare the Vegetables:

Preheat your oven to 400°F (200°C).

In a large bowl, toss the sweet potato chunks and carrot chunks with 2 tablespoons of olive oil, honey, smoked paprika, garlic powder, dried thyme, salt, and pepper.

Spread the vegetables evenly on a baking sheet and bake for 25-30 minutes, or until they are tender and slightly caramelized.

 

2️⃣ Grill the Chicken and Shrimp:

While the vegetables are baking, heat a grill or grill pan over medium-high heat.

Season the chicken breasts with salt, pepper, and a drizzle of olive oil.

Grill the chicken breasts for about 5-7 minutes per side, or until fully cooked (internal temperature should reach 165°F or 74°C). Set aside to rest.

Season the shrimp with salt, pepper, and a drizzle of olive oil. Grill the shrimp for about 2-3 minutes per side, or until they are pink and opaque.

 

3️⃣ Assemble the Dish:

Slice the grilled chicken breasts.

Arrange the grilled chicken slices and shrimp on a serving platter.

Add the roasted sweet carrots and potatoes around the chicken and shrimp.

 

4️⃣ Garnish and Serve:

Garnish with freshly chopped parsley.
