1 lb (450 g) steak (sirloin, ribeye, or your choice)
2 cups baby potatoes, halved
2 tbsp olive oil
3 garlic cloves, minced
2 tbsp unsalted butter
1 tbsp fresh parsley, chopped

1️⃣ Preheat oven to 400°F (200°C).
2️⃣ Toss the potatoes with 1 tbsp olive oil, salt, pepper, and half the parsley. Bake for 15–20 minutes until golden and crispy.
3️⃣ Heat a skillet over medium-high heat. Season the steak generously with salt and pepper.
4️⃣ Add 1 tbsp olive oil and sear the steak for 3–4 minutes per side (for medium-rare), or to your desired doneness.
5️⃣ In the last minute, add butter and minced garlic to the skillet, basting the steak with the melted garlic butter.
6️⃣ Let the steak rest for 5 minutes, then slice and drizzle with the pan juices.
7️⃣ Serve alongside the crispy herb potatoes, sprinkled with the remaining parsley.
