For the Steak and Potatoes:
1 ½ pounds sirloin steak, cut into bite-sized pieces – Provides a tender, juicy bite and soaks up the garlic butter beautifully.
1 ½ pounds baby potatoes, halved – Their natural sweetness caramelizes when roasted, adding incredible texture and flavor
4 tablespoons olive oil, divided – Helps achieve a crispy exterior on the potatoes and gives the steak a flavorful sear.
6 cloves garlic, minced – The star ingredient that infuses the dish with an irresistible, savory aroma.
4 tablespoons unsalted butter, divided – Creates a rich, velvety sauce that enhances the steak’s natural flavors.
1 teaspoon dried thyme – Adds an earthy, herby depth to the dish.
1 teaspoon dried rosemary – Brings a fragrant, slightly piney flavor that pairs well with steak and potatoes
1 teaspoon dried oregano – Provides a subtle peppery and citrusy note to balance the garlic butter.
Salt and pepper to taste – Enhances all the flavors, bringing out the best in every bite.
Fresh parsley, chopped for garnish – Adds a burst of color and freshness for the perfect finishing touch

Step 1: Roast the Potatoes

1. Preheat your oven to 400°F (200°C).
2. In a large mixing bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, salt, and pepper.
3. Spread the potatoes in a single layer on a baking sheet, ensuring they are not overcrowded.
4. Roast for 20-25 minutes, flipping halfway through, until golden brown and crispy on the outside, soft on the inside.
Step 2: Sear the Steak
5. While the potatoes are roasting, heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
6. Add the bite-sized steak pieces to the skillet in a single layer (work in batches if necessary).
7. Sear for 5-7 minutes, stirring occasionally, until the steak develops a golden-brown crust.
8. Remove the steak from the skillet and set aside.
Step 3: Make the Garlic Butter Sauce
9. In the same skillet, melt 2 tablespoons of unsalted butter over medium heat
