For the Crust:

1 ½ cups graham cracker crumbs

¼ cup granulated sugar

6 tbsp unsalted butter, melted

For the Lemon Cheesecake Filling:

3 (8 oz) packages cream cheese, softened

1 cup granulated sugar

3 large eggs

1 tsp vanilla extract

½ cup fresh lemon juice

Zest of 2 lemons

½ cup sour cream

For the Lemon Curd:

3 large eggs

1 cup granulated sugar

⅓ cup fresh lemon juice

Zest of 2 lemons

6 tbsp unsalted butter, softened

For the Meringue:

4 large egg whites

½ tsp cream of tartar

¾ cup granulated sugar

Prepare the Crust (Duration: 10 minutes + Chill 15 minutes)

Preheat oven to 325°F (163°C).

Mix graham cracker crumbs, sugar, and melted butter until combined.

Press into the bottom of a 9-inch springform pan.

Bake for 10 minutes, then let cool and chill in fridge.

Make the Lemon Curd (Duration: 15 minutes + Cool 30 minutes)

In a saucepan, whisk eggs, sugar, lemon juice, and zest over medium heat.

Stir continuously until thickened (about 8–10 minutes).

Remove from heat and whisk in butter until smooth.

Let cool to room temperature.

Prepare the Cheesecake Filling (Duration: 15 minutes)

Beat cream cheese and sugar until smooth.

Add eggs one at a time, then vanilla, lemon zest, lemon juice, and sour cream.

Mix until creamy and combined.

Assemble and Bake (Duration: 50 minutes + Cool 1 hour)

Pour half of the cheesecake filling over the crust.

Spoon half of the lemon curd on top, swirling gently with a knife.

Add remaining cheesecake filling and swirl the rest of the lemon curd.

Bake for 50 minutes, or until edges are set and center slightly jiggles.

Cool in the oven with door ajar for 1 hour, then chill in the fridge.

Make the Meringue and Top (Duration: 10 minutes + Broil 2-3 minutes)

Beat egg whites and cream of tartar until soft peaks form.

Gradually add sugar, beating until stiff and glossy peaks form.

Spread meringue evenly over the chilled cheesecake.

Broil for 2–3 minutes until golden brown—watch closely!

Serve and Enjoy! (Duration: Serve chilled)
