1 package (1 oz) taco seasoning
1 can (10 oz) diced tomatoes and green chiles, undrained
2 cups shredded cheddar cheese
Optional: Mini phyllo shells, wonton wrappers, or biscuit dough for the base
Instructions:
1. Preheat oven to 375°F (190°C).
2. Cook the beef: In a large skillet over medium heat, cook the ground beef until no longer pink. Drain excess fat.
3. Add seasoning and tomatoes: Stir in taco seasoning and the can of diced tomatoes with green chiles (including the liquid). Simmer for 5–7 minutes until the mixture thickens slightly.
4. Assemble the bites:
If using mini phyllo shells or wonton wrappers: Place them on a baking sheet or in mini muffin tins.
Spoon the beef mixture evenly into each shell or wrapper.
Top generously with shredded cheddar cheese.
5. Bake: Bake for 8–10 minutes, or until the cheese is melted and bubbly and the shells are crispy.
6. Serve: Let cool slightly. Serve warm with a side of ranch dressing or sour cream for dipping.
