Ingredients:
For the Honeybun Cake:
2 cups all-purpose flour
1 ½ tsp baking powder
½ tsp baking soda
1 tsp ground cinnamon
½ tsp salt
1 cup granulated sugar
½ cup unsalted butter, softened
2 large eggs
1 cup buttermilk
1 tsp vanilla extract
1 cup crushed Oreo cookies
For the Cinnamon Cookies n Cream Icing:
1 cup powdered sugar
4 tbsp unsalted butter, softened
2 tbsp cream cheese, softened
1 tsp ground cinnamon
2-3 tbsp milk
½ cup crushed Oreo cookies
Instructions:
Preheat Oven & Prepare Pan
Preheat oven to 350°F (175°C).
Grease and flour a 9×13-inch baking pan.
Mix Dry Ingredients
In a bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
Cream Butter & Sugar
In a large bowl, beat butter and sugar until light and fluffy.
Add eggs one at a time, beating well after each addition.
Stir in vanilla extract.
Combine & Add Oreos
Alternate adding dry ingredients and buttermilk to the butter mixture, beginning and ending with dry ingredients.
Fold in crushed Oreo cookies gently.
Bake
Pour batter into prepared pan and spread evenly.
Bake for 35-40 minutes or until a toothpick inserted comes out clean.
Let cool completely before icing.
Prepare Icing
Beat butter and cream cheese until smooth.
Gradually add powdered sugar and cinnamon, mixing well.
Add milk 1 tablespoon at a time until desired consistency is reached.
Fold in crushed Oreo cookies gently.
Frost & Serve
Spread the cinnamon cookies n cream icing over the cooled cake.
