2 ribeye or sirloin steaks
1/2 cup salted butter
4 garlic cloves, minced
2 tablespoons fresh parsley, chopped
2 tablespoons fresh chives, chopped
1 teaspoon smoked paprika
2 tablespoons Worcestershire sauce
1 tablespoon lemon juice
Salt and black pepper to taste
Optional: red pepper flakes, for a touch of heat

Begin by bringing the steaks to room temperature for about 15 minutes.
In a small saucepan, melt the butter over low heat. Add the garlic and cook for 2-3 minutes, until fragrant.
Stir in the fresh parsley, chives, smoked paprika, Worcestershire sauce, lemon juice, and a pinch of salt and black pepper. Let the mixture simmer for 5 minutes to allow the flavors to meld together. If desired, add red pepper flakes for an added kick.
While the butter mixture is simmering, heat a grill or cast-iron skillet over medium-high heat. Season both sides of the steaks with salt and black pepper.
Sear the steaks for about 4-5 minutes per side (for medium-rare), adjusting the cooking time to your desired level of doneness.
Once the steaks are cooked to your liking, remove them from the heat and drizzle the prepared cowboy butter over the top of each steak.
Let the steaks rest for 5 minutes before serving, allowing the butter to soak into the meat.
