Ingredients:

400 ml warm water

20g extra virgin olive oil

7g instant yeast

15g salt

20g granulated sugar

680g all-purpose flour

1. In a large mixing bowl, combine the warm water, olive oil, yeast, salt, and sugar. Stir gently until the yeast begins to dissolve.

2. Slowly add the flour in batches, stirring to create a soft, sticky dough.

3. Use a wet hand to knead the dough right in the bowl until smooth and elastic—about 8 minutes.

4. Cover the bowl and let the dough rest for 30 minutes at room temperature.

5. Wet your hands again and fold the dough over itself 3–4 times to build strength.

6. Form the dough into a smooth ball, place it seam-side down, and cover. Let it rise for 1 hour.

7. Once risen, divide the dough into 4 equal portions (about 280g each).

8. Roll each piece into a ball and place them on a lightly oiled tray. Cover with plastic wrap and let them rest for another 15 minutes.

9. To shape, gently press outward from the center, keeping a ½-inch crust around the edges. Stretch to 10–12 inches.

10. Add your favorite sauce and toppings, and bake at 550°F (285°C) for 10–12 minutes until golden and bubbling.

Homemade Donut Dough

These donuts are soft, buttery, and perfect for glazing, sugaring, or filling with your favorite jam. They take a bit of time, but the result is bakery-level delicious.

Ingredients:

250g warm milk

500g plain flour

2 large eggs

10g dry yeast

1 sachet vanilla sugar

50g caster sugar

1 pinch salt

80g unsalted butter (softened)

Instructions:

1. Warm the milk to around 37°C (just warm to the touch). Stir in the yeast and a teaspoon of sugar, then let it sit for 2 minutes to activate.

2. In a large bowl, combine the flour, remaining sugar, salt, vanilla sugar, and eggs. Pour in the milk mixture and knead for 5 minutes.

3. Add the softened butter in small pieces while kneading, and continue mixing until fully incorporated and smooth—about 5 more minutes.

4. Transfer the dough to a greased bowl, cover, and let it rise in a warm spot until doubled in size.

5. Turn the dough out onto a lightly floured surface. Divide into 12 equal portions and shape into smooth balls. Flatten them slightly to about 2cm thick.

6. Use a small cookie cutter to create a hole in the center of each donut.

7. Place the shaped donuts on parchment-lined trays and let them rest for 30 minutes to puff up again.

8. Heat oil in a deep fryer or pot to 350°F (175°C) and fry each donut for 1–2 minutes per side until golden brown.

9. Drain on paper towels. While still warm, roll them in sugar or dip in glaze as desired.
