1. Cook the potatoes:

In a large skillet over medium heat, add 1 tbsp butter and olive oil.

Add halved potatoes cut side down and season with salt, pepper, and half the Italian seasoning.

Cover and cook for 10–12 minutes, stirring occasionally, until golden and fork-tender.

Remove potatoes from skillet and set aside.

2. Sear the steak:

In the same skillet, add another 1 tbsp butter.

Add steak slices in a single layer and season with salt, pepper, and remaining Italian seasoning.

Sear for 2–3 minutes per side until browned (don’t overcook).

Remove steak and set aside with the potatoes.

3. Make the garlic butter:

Lower heat, melt remaining 2 tbsp butter.

Add minced garlic and sauté for 30 seconds until fragrant.

4. Combine and finish:

Return steak and potatoes to the skillet.

Toss everything gently to coat in the garlic butter.

Cook 1–2 more minutes to warm through.

5. Garnish and serve:

Sprinkle with fresh parsley and serve immediately.
