Ingredients
* 2 beef short ribs
* Salt & pepper
* 1 tbsp olive oil
* 1 onion, diced
* 2 garlic cloves, minced
* 2 cups beef broth
* 1 cup red wine (optional)
* 2 tbsp tomato paste
* 1 sprig rosemary
* 1 sprig thyme
* 2 cups mashed potatoes
* Chopped parsley for garnish
Instructions
1️⃣ Sear Ribs:
* Season ribs with salt and pepper. In a pot, heat olive oil and brown the ribs on all sides. Remove and set aside.
2️⃣ Sauté Aromatics:
* In the same pot, sauté onion and garlic until soft. Stir in tomato paste and cook for 1-2 minutes.
3️⃣ Braise:
* Add beef broth, red wine, rosemary, and thyme. Return ribs to the pot. Cover and simmer on low heat for 2.5 hours until ribs are fork-tender.
4️⃣ Mash Potatoes:
* While ribs cook, prepare creamy mashed potatoes.
5️⃣ Serve:
* Spoon mashed potatoes onto plates. Top with the braised ribs and drizzle with sauce. Garnish with parsley.
