1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/2 cup butter, melted
24 oz cream cheese, softened
1 cup sugar
1 tsp vanilla extract
4 eggs
1/4 cup flour
1/2 cup heavy cream
1/2 cup milk
1/2 cup semisweet chocolate chips

Preheat the oven to 325°F (165°C). Grease a 9-inch springform pan.
In a small bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture onto the bottom of the prepared pan.
In a large bowl, beat cream cheese until smooth. Gradually add 1 cup of sugar and mix well. Add vanilla extract.
Add eggs one at a time, mixing well after each addition. Stir in flour. Pour the mixture over the crust.
Bake for 55-60 minutes, or until the center is almost set. Remove from the oven and let it cool for 10 minutes. Run a knife around the edges of the pan to loosen.
In a small saucepan, heat heavy cream and milk until almost boiling. Remove from heat and add chocolate chips. Stir until melted and smooth.
Pour the chocolate ganache over the cheesecake. Refrigerate for at least 4 hours before serving.
