For the Shrimp:
– 1½ lbs large shrimp, peeled and deveined
– 2 tablespoons olive oil
– 3 tablespoons honey
– Juice and zest of 2 limes
– 2 cloves garlic, minced
– 1 teaspoon ground cumin
– 1 teaspoon chili powder
– ½ teaspoon smoked paprika
– ¼ teaspoon cayenne pepper (optional, for extra heat)
– Salt and black pepper, to taste
For the Rice:
– 1 cup jasmine or basmati rice
– 2 cups water or chicken broth
– 1 tablespoon lime juice
– 1 tablespoon chopped cilantro
– Salt, to taste
For the Avocado Layer:
– 2 ripe avocados, diced
– 1 tablespoon lime juice
– Pinch of salt
Optional Toppings:
– Extra chopped cilantro
– Diced tomatoes
– Crumbled cotija or feta cheese
– Lime wedges

Cooking the Shrimp:
1. Marinate Shrimp: In a bowl, whisk together olive oil, honey, lime juice, lime zest, garlic, cumin, chili powder, smoked paprika, cayenne pepper (if using), salt, and black pepper. Add shrimp and marinate for at least 30 minutes.
2. Cook Shrimp: Grill or sauté shrimp until pink and cooked through.

Preparing the Rice:
1. Cook Rice: Cook jasmine or basmati rice according to package instructions using water or chicken broth.
2. Season Rice: Mix in lime juice, chopped cilantro, and salt.

Assembling the Stack:
1. Layer Rice: Place a layer of cooked rice on a plate or serving dish.
2. Add Shrimp: Top rice with cooked shrimp.
3. Avocado Layer: Top shrimp with diced avocado mixed with lime juice and salt.
