2 racks of pork ribs (about 4 pounds total)
1/2 cup honey
1/4 cup soy sauce
1/4 cup brown sugar
4 cloves garlic, minced
1 tablespoon rice vinegar
1 teaspoon ground ginger
1 teaspoon black pepper
1 teaspoon salt
1 tablespoon olive oil

Preheat your oven to 300°F (150°C).
Remove the membrane from the back of the ribs for more tender results.
Season the ribs with salt and black pepper, then place them in a large baking dish.
In a bowl, whisk together the honey, soy sauce, brown sugar, minced garlic, rice vinegar, ground ginger, and olive oil to create the glaze.
Pour half of the glaze over the ribs, ensuring they are well coated.
Cover the baking dish with aluminum foil and bake in the preheated oven for 2.5 to 3 hours, or until the ribs are tender.
Remove the foil and increase the oven temperature to 400°F (200°C).
Brush the remaining glaze over the ribs and return them to the oven, uncovered, for an additional 15-20 minutes, or until the glaze is caramelized and sticky.
Let the ribs rest for a few minutes before slicing and serving.
