1 lb smoked Polish sausage, sliced into 1/4-inch thick rounds
4–5 medium russet potatoes, peeled and diced
1 small onion, diced (optional but adds great flavor)
2–3 tbsp olive oil or butter
1/2 tsp garlic powder
1/2 tsp paprika
Salt and pepper, to taste
Optional garnish: chopped parsley or green onions
Instructions:
1. Prep the potatoes:
Rinse the diced potatoes in cold water and pat dry with a paper towel. This helps them crisp up in the pan.
2. Cook the sausage:
In a large skillet over medium heat, cook the sausage slices until browned on both sides (about 5–6 minutes).
Remove sausage and set aside, leaving the rendered fat in the pan for flavor.
3. Cook the potatoes:
Add olive oil (or butter) to the same skillet.
Add diced potatoes and cook uncovered over medium-high heat, stirring occasionally, for 10–12 minutes or until golden brown and tender.
Add diced onions in the last 5 minutes if using.
4. Season and combine:
Sprinkle garlic powder, paprika, salt, and pepper over the potatoes.
Return the sausage to the skillet, stir to combine, and cook another 2–3 minutes to heat everything through.
5. Serve:
Garnish with chopped parsley or green onions if desired.
Serve hot as a main dish or hearty side.
