Ingredients:
For the Fries:
1 lb (450g) frozen or homemade French fries (crinkle-cut or shoestring work well)
1 tbsp Cajun seasoning (or mix: paprika, garlic powder, onion powder, cayenne, oregano)
1 tbsp olive oil (if baking fries)
For the Sauce (Voodoo Drizzle):
1/2 cup mayo
1 tbsp ketchup
1 tbsp Dijon mustard
1 tsp hot sauce (e.g. Frank’s, Tabasco)
1 tsp Cajun seasoning
1/2 tsp garlic powder
1 tsp honey or sugar (optional, for balance)
Toppings:
1 cup shredded cheddar cheese (or pepper jack for spice)
1/4 cup chopped cooked bacon or Cajun chicken (optional)
2 green onions, chopped
Pickled jalapeños (optional)
Fresh parsley (for garnish)
Instructions:
1. Bake or fry the fries according to package instructions or deep-fry homemade ones until golden and crispy. Toss with Cajun seasoning while hot.
2. Make the voodoo sauce: In a bowl, mix mayo, ketchup, mustard, hot sauce, Cajun seasoning, garlic powder, and honey. Adjust heat/sweetness to taste.
3. Assemble the fries:
Place fries on a baking sheet or serving plate.
Sprinkle with shredded cheese and return to oven or broiler until melted (about 3–5 min).
4. Top it off:
Drizzle generously with voodoo sauce.
Add cooked bacon or chicken if using.
Sprinkle with green onions, jalapeños, and fresh parsley.
