Toasted Baguette with Tomato & Mozzarella

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Ingredients:

1 baguette, sliced into 1/2-inch rounds

2–3 ripe tomatoes, diced or sliced

Fresh mozzarella (sliced or cubed)

Olive oil

Salt & freshly ground black pepper

Optional: fresh basil, balsamic glaze, garlic

 

Instructions:

1. Preheat oven to 375°F (190°C).

2. Arrange baguette slices on a baking sheet. Brush each slice lightly with olive oil.

3. Toast in the oven for 5–7 minutes, or until golden and crisp.

4. (Optional garlic rub): While warm, rub the top of each toast with a cut garlic clove for extra flavor.

5. Top with tomato and mozzarella: Either layer a tomato slice + mozzarella slice, or spoon diced tomato and cubed mozzarella on top.

6. Season with salt and pepper, and drizzle with a little olive oil (or balsamic glaze if using).

7. Return to oven (optional) for 2–3 minutes to slightly melt the cheese, or serve fresh as-is.

8. Garnish with fresh basil before serving.
