Tangy and Spicy Pickled Shrimp

 

 

 

 

 

 

 

 

 

 

 

 

 

Ingredients:

1 lb cooked, peeled, and deveined shrimp

½ cup white wine vinegar

¼ cup olive oil

1 tbsp lemon juice

1 tsp sugar

1 tsp salt

1 tsp crushed red pepper flakes

½ tsp celery seed

1 clove garlic, thinly sliced

½ small red onion, thinly sliced

1 bay leaf

1 tbsp chopped fresh dill (optional)

Preparation:

In a bowl, whisk together vinegar, olive oil, lemon juice, sugar, salt, pepper flakes, celery seed, and garlic.

Layer shrimp and onion slices in a jar or container. Add bay leaf and dill.

Pour marinade over shrimp to cover. Seal and refrigerate for at least 8 hours or overnight.

Serve chilled as an appetizer or salad topping.
