Preheat your oven to 375°F (190°C) and lightly spray a muffin tin with cooking spray.
Place a wonton wrapper into each muffin cup, pressing it down to form a cup shape.
In a skillet over medium heat, cook the ground beef until browned, breaking it apart with a spatula.
Drain excess fat from the skillet and return to heat. Add taco seasoning and a small amount of water according to the packet instructions, stirring well.
Fill each wonton cup with a tablespoon of the seasoned meat mixture.
Top the meat with a spoonful of salsa, followed by a sprinkle of cheddar cheese.
Place another wonton wrapper on top, pressing it gently into the cup, and repeat the layering process with meat, salsa, and cheese.
Bake in the preheated oven for 15-18 minutes, or until the wonton edges are golden brown and crispy.
Remove the muffin tin from the oven and allow to cool for a few minutes before carefully removing the Taco Cupcakes.
Garnish each cupcake with a dollop of sour cream, a few green onion slices, diced tomatoes, and black olives before serving.
