Seasoned Fries:

2 teaspoons salt

1 teaspoon chili powder

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon cayenne pepper (optional for heat)

1 tablespoon cornstarch (for crispy coating)

3–4 large russet potatoes (or use frozen fries)

Vegetable oil for frying

1. Prep the potatoes: Peel and cut into fries. Soak in cold water for 30 minutes, then drain and pat dry.

2. Mix seasoning: Combine salt, chili powder, paprika, garlic powder, onion powder, cayenne, and cornstarch in a small bowl.

3. Fry the fries: Heat oil to 350°F (175°C). Fry potatoes in batches until golden and crispy. Drain on paper towels.

4. Season: Immediately toss hot fries with the seasoning mix.

Nacho Cheese Sauce:

Ingredients:

2 tablespoons butter

2 tablespoons all-purpose flour

1 cup whole milk

1 1/2 cups shredded cheddar cheese (or a cheddar blend)

1/2 teaspoon salt

1/4 teaspoon cayenne or hot sauce (optional)

1/4 teaspoon garlic powder

Instructions:

1. Make a roux: Melt butter in a saucepan over medium heat. Stir in flour and cook 1 minute.

2. Add milk: Slowly whisk in milk until smooth. Cook until slightly thickened.

3. Add cheese: Stir in cheese until melted and smooth. Season with salt, garlic powder, and cayenne or hot sauce if using.
