Taco Bell Chicken Quesadilla Copycat

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Ingredients:

1/4 cup mayonnaise

2 tablespoons sour cream

1 teaspoon taco seasoning

1/2 teaspoon ground cumin

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1–2 teaspoons pickled jalapeño juice (from the jar)

1 tablespoon finely chopped pickled jalapeños

Mix all ingredients together and chill for at least 30 minutes to allow flavors to blend.

Quesadilla Assembly

Ingredients:

2 large flour tortillas

1 cup cooked chicken breast, shredded or sliced (grilled or pan-seared)

1/2 cup shredded Monterey Jack cheese

1/2 cup shredded cheddar cheese

Butter or oil for grilling

1. Make the sauce: Combine all sauce ingredients in a bowl. Mix well and set aside.

2. Assemble quesadilla:

Spread about 1–2 tablespoons of the jalapeño sauce on one side of a tortilla.

Add a layer of cheese, chicken, and more cheese on top.

Top with the second tortilla.

3. Grill it:

Heat a skillet over medium heat. Lightly butter or oil the pan.

Cook quesadilla for 2–3 minutes per side until golden brown and cheese is melted.

4. Slice & Serve: Cut into wedges and serve with extra sauce or salsa if desired.
