Ingredients:
2 cups cooked penne pasta
2 cups cooked chicken breast, shredded or cubed (grilled or rotisserie works great)
1 cup BBQ sauce (sweet and smoky preferred)
1/2 cup heavy cream or whole milk (for a creamy finish)
1/2 cup shredded mozzarella cheese
1/4 cup shredded sharp cheddar cheese
1/4 cup diced red onions (optional, for a bite)
1/4 cup chopped cooked bacon (optional, for savory crunch)
1 tbsp olive oil or butter
1 tsp garlic powder
Salt & black pepper, to taste
Chopped parsley or green onions, for garnish
Instructions:
1. Cook pasta according to package instructions. Drain and set aside.
2. In a large skillet, heat olive oil or butter over medium heat. Add red onions (if using) and sauté for 2-3 minutes until soft.
3. Add the cooked chicken, garlic powder, and a pinch of salt and pepper. Stir to combine.
4. Pour in the BBQ sauce and cream, stirring until everything is coated and heated through (about 3-5 minutes). Let it simmer gently.
5. Add in the cooked penne pasta, and stir to combine everything evenly.
6. Sprinkle in the cheeses and let them melt into the sauce, stirring gently. Optional: fold in cooked bacon.
7. Taste and adjust seasoning as needed.
8. Garnish with parsley or green onions, and serve hot.
