1 cup fresh pineapple, finely chopped
1/2 cup water
1/4 cup white vinegar
1/4 cup honey
2 tablespoons soy sauce
1 tablespoon fresh ginger, minced
2 garlic cloves, minced
Optional for heat (if desired):
1–2 teaspoons red pepper flakes or
1 small red chili, finely chopped
Instructions:
1. Combine ingredients:
In a medium saucepan, combine the chopped pineapple, water, vinegar, honey, soy sauce, ginger, and garlic. If using chili or red pepper flakes, add them now.
2. Simmer:
Bring the mixture to a boil over medium heat. Once boiling, reduce the heat and simmer for 10–15 minutes, stirring occasionally, until the pineapple is soft and the sauce slightly thickens.
3. Blend (optional):
For a smoother sauce, use an immersion blender or transfer to a blender and pulse until smooth. If you prefer it chunky, you can skip this step.
4. Cool and store:
Let the sauce cool completely. Pour into a jar or airtight container and store in the fridge for up to 1 week.
