1 box (15.25 oz) strawberry cake mix
3 large eggs
½ cup vegetable oil
1 cup water
1 cup fresh strawberries, pureed
1½ cups Oreo cookies, crushed
1 cup unsalted butter, softened
4 cups powdered sugar
¼ cup heavy cream
1 tsp vanilla extract
½ cup crushed Oreos
Instructions
1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
2. In a large bowl, combine cake mix, eggs, oil, water, and strawberry puree.
3. Beat with a hand or stand mixer until smooth and well-combined.
4. Divide batter evenly between pans and bake for 25–30 minutes.
5. Use a toothpick to check for doneness; cool cakes on wire rack.
6. Place Oreos in a zip-top bag and crush with a rolling pin until crumbly.
7. To make the icing, beat butter until creamy. Gradually add powdered sugar.
8. Pour in heavy cream and vanilla; mix until fluffy.
9. Fold in the crushed Oreos gently.
10. Level cake layers if needed. Place one on a cake stand and spread icing.
11. Sprinkle Oreo crumble, top with second cake layer, and cover in frosting.
12. Decorate with extra Oreo crumble and optional fresh strawberries.
13. Refrigerate for 30 minutes before slicing for cleaner cuts.
