1 lb beef tenderloin, cut into 1-inch cubes
1 tbsp olive oil
1 tsp paprika
Salt and pepper, to taste
8 oz mushrooms, sliced (button or cremini work great)
2 cloves garlic, minced
1/2 cup heavy cream or sour cream
1/4 cup beef broth or water
1 tbsp butter
Fresh parsley, chopped (optional, for garnish)
Instructions
1. Season the steak bites with paprika, salt, and pepper.
2. Heat olive oil in a large skillet over medium-high heat. Add the steak bites and sear until browned on all sides and cooked to your liking (about 3-4 minutes for medium-rare). Remove steak from pan and set aside.
3. In the same pan, add butter. Once melted, sauté the mushrooms until golden and their liquid evaporates, about 5 minutes.
4. Add the garlic and cook for 1 minute until fragrant.
5. Pour in beef broth to deglaze the pan, scraping up any browned bits.
6. Lower heat to medium-low and stir in the heavy cream. Let it simmer for 2-3 minutes until sauce thickens slightly.
7. Return steak bites to the pan, coating them in the creamy mushroom sauce. Heat through for another minute.
8. Garnish with fresh parsley if desired and serve hot.
