1 lb ground beef (or a 50/50 mix of ground beef and pork)
1 cup fresh spinach, finely chopped
3 cloves garlic, minced
1/4 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 large egg
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp dried oregano (optional)
1/2 tsp onion powder (optional)
4 oz mozzarella cheese, cut into ½-inch cubes
2 tbsp olive oil, for searing
Marinara sauce, for serving (optional)
Instructions:
1. Preheat oven to 375°F (190°C).
2. Prepare the filling:
Cut mozzarella into small cubes (about ½-inch). Set aside in the fridge to keep them firm.
3. Make the meat mixture:
In a large bowl, combine the ground meat, chopped spinach, garlic, breadcrumbs, Parmesan, egg, salt, pepper, and optional seasonings.
Mix gently until everything is well incorporated (don’t overwork the meat to keep it tender).
4. Form and stuff the meatballs:
Take about 2 tablespoons of the meat mixture and flatten it slightly in your hand.
Place a cube of mozzarella in the center, then wrap the meat around it, sealing the cheese inside.
Roll into a ball and place on a plate. Repeat until all meatballs are formed.
5. Sear the meatballs (optional but recommended):
Heat olive oil in a skillet over medium-high heat.
Sear the meatballs on all sides until browned (about 5–7 minutes total). This helps seal in the cheese and adds flavor.
6. Bake:
Transfer seared meatballs to a baking dish.
Optional: Pour a bit of marinara sauce over or around them.
Bake for 15–20 minutes, or until meatballs are cooked through and the cheese is melty inside.
7. Serve:
Serve hot with marinara sauce, over spaghetti, rice, or alongside crusty bread.
