Soft Pretzels
Ingredients:
1 cup warm water (about 110°F/45°C)
2 tsp active dry yeast
1/4 cup sugar
1 tsp salt
3 cups all-purpose flour
1 tbsp vegetable oil
2 cups hot water
1/4 cup baking soda
Coarse salt (for topping)
Instructions:
1. Activate Yeast:
In a large bowl, mix warm water, sugar, and yeast. Let sit for 5–10 minutes until foamy.
2. Make Dough:
Stir in salt and flour gradually until a dough forms. Knead for 5–7 minutes until smooth.
3. Rest:
Lightly oil the dough with vegetable oil, cover, and let rise in a warm place for about 1 hour, or until doubled in size.
4. Preheat Oven:
Set oven to 450°F (230°C). Line a baking sheet with parchment paper.
5. Shape Pretzels:
Divide dough into 8 pieces. Roll each into a rope and twist into a pretzel shape.
6. Baking Soda Bath:
In a shallow bowl, dissolve baking soda in 2 cups of hot water. Dip each pretzel in the bath and place on the baking sheet.
7. Top & Bake:
Sprinkle with coarse salt. Bake for 10–12 minutes or until golden brown.
Cheddar Cheese Dip
Ingredients:
2 tbsp butter
2 tbsp flour
1 cup milk
2 cups shredded sharp cheddar cheese
Instructions:
1. Make Roux:
In a saucepan over medium heat, melt butter. Whisk in flour and cook for 1 minute.
2. Add Milk:
Slowly whisk in milk and cook, stirring until thickened (about 3–5 minutes).
3. Add Cheese:
Remove from heat and stir in cheddar until melted and smooth.
