Step 1: Preheat and Prep
Preheat your oven to 375°F (190°C). Line your loaf pan with parchment paper or lightly grease it with oil or butter.

Step 2: Make the Meat Base
In a large bowl, mix together the ground beef, ground pork, smoked paprika, garlic powder, onion powder, breadcrumbs, eggs, salt, and pepper until just combined. Don’t overmix or the meat will become dense!

Step 3: Make the Cheesy Filling
In a separate bowl, combine the cream cheese, shredded cheddar, chopped jalapeños, and crumbled bacon. It’ll be thick and delicious.

Step 4: Layer the Loaf
Press half of the meat mixture into the bottom of the loaf pan. Add all of the cream cheese filling on top, then layer the remaining meat mixture over it, pressing the edges to seal the filling inside.

Step 5: Bake
Bake for 45–55 minutes, or until the internal temperature reaches 160°F. Let it rest for at least 10 minutes before slicing—it helps the juices redistribute and keeps everything nice and tender.

Step 6: Make the Ranch Drizzle
While the meatloaf rests, stir together the ranch dressing, sour cream, and optional lime juice or herbs. Drizzle it over each slice just before serving.
