Ingredients (serves 2):

2 slices of sourdough or whole grain bread, toasted

1 ripe avocado

1 tsp lemon juice

Salt & black pepper, to taste

2–4 slices smoked salmon

Optional toppings:

Thin red onion slices

Capers

Fresh dill

Everything bagel seasoning

Cherry tomatoes or cucumber slices

Soft-boiled or poached egg (for extra protein)

 

Instructions:

1. Mash the avocado in a bowl with lemon juice, salt, and pepper.

2. Toast the bread slices to your preferred crispiness.

3. Spread the avocado mixture evenly over the toasted bread.

4. Top with smoked salmon slices.

5. Add optional toppings like red onion, capers, dill, or a soft-boiled egg.

6. Finish with a sprinkle of everything bagel seasoning or a drizzle of olive oil if desired.
