Ingredients:
1.5 lbs beef chuck roast (680g), cut into 1-inch cubes
1 lb baby potatoes (450g), halved
4 tablespoons unsalted butter, melted
6 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning (or a mix of thyme, oregano, rosemary)
1/2 teaspoon paprika (optional, for color)
1 tablespoon olive oil (for searing, optional)
Fresh parsley, chopped (for garnish)
Instructions:
1. Optional – Sear the Beef:
Heat olive oil in a skillet over medium-high heat. Sear beef bites for 1–2 minutes per side to brown. This step adds flavor but can be skipped.
2. Add to Slow Cooker:
Place the halved baby potatoes in the bottom of the slow cooker. Add the beef bites on top.
3. Mix Garlic Butter Sauce:
In a small bowl, mix the melted butter, minced garlic, salt, pepper, Italian seasoning, and paprika.
4. Pour Over:
Drizzle the garlic butter mixture evenly over the beef and potatoes. Toss gently to coat.
5. Cook:
Cover and cook on LOW for 6–8 hours or HIGH for 3.5–4.5 hours, until beef is tender and potatoes are cooked through.
6. Finish & Serve:
Taste and adjust seasoning if needed. Garnish with fresh chopped parsley before serving.
