Ingredients:
2 cups dry macaroni
6 oz claw crab meat
8 oz shrimp, peeled and deveined
8 oz sour cream
4 tablespoons butter
2 tablespoons flour
1 spring onion
1 can evaporated milk
8 oz block sharp white cheddar cheese
4 oz block mozzarella cheese
¼ cup panko bread crumbs
Salt and black pepper, to taste
Directions:
Preheat the oven to 350°F.
Peel and devein shrimp if needed.
Cook macaroni according to package directions. Drain well.
Place drained macaroni in a large mixing bowl and stir in sour cream until coated.
Add crab meat and mix well.
Finely chop the spring onion and set aside.
Grate the white cheddar and mozzarella cheese and set aside.
In a medium saucepan, melt butter and cook shrimp just until done. Remove shrimp, chop slightly when cooled, and add to the macaroni mixture.
In the same saucepan, sauté chopped onions until tender. Sprinkle in flour and cook for about 1 minute.
Slowly add evaporated milk, stirring until thickened. Gradually stir in grated cheddar until melted.
Pour the cheese sauce over the macaroni and seafood mixture. Stir to combine. Add salt and pepper to taste.
Transfer to a buttered baking dish. Top with mozzarella cheese, breadcrumbs, and a sprinkle of paprika if desired.
Bake for 20–25 minutes, or until lightly browned on top.
Serve warm.
