2 eggs

1/2 ripe banana (mashed)

1/2 ripe avocado (cubed or mashed)

1/4 cup fresh blackberries

1 tsp butter or olive oil

Pinch of salt (optional)

Pinch of cinnamon or chili flakes (optional, based on taste)

1. Prep the ingredients:

Mash the banana and avocado in separate bowls or together if you want a unified texture.

Lightly beat the eggs in a bowl with a pinch of salt.

 

2. Cook the eggs:

Heat a non-stick pan over medium heat and add butter/oil.

Pour in the eggs and cook gently, stirring slowly.

 

3. Add the fruit/veg:

Once the eggs are halfway set, fold in mashed banana and avocado. Stir gently to combine.

Cook until eggs are just set—don’t overcook or the banana will become too sweet and mushy.

 

4. Finish:

Remove from heat and gently fold in the blackberries just before serving for a fresh pop.
