Ingredients:
For the Shrimp & Broccoli:
1 lb (450g) large shrimp, peeled & deveined
2 cups broccoli florets
Salt and black pepper to taste
1/2 tsp paprika or chili flakes (optional for a kick)
1 tbsp olive oil
2 tbsp butter
For the Garlic Butter Sauce:
4 tbsp unsalted butter
4–5 garlic cloves, finely minced
1 tbsp lemon juice
1/4 cup chicken or seafood broth (or water)
1 tbsp chopped parsley (optional)
Instructions:
1. Prep the Broccoli:
Steam or blanch broccoli for 2–3 minutes until vibrant green and slightly tender.
Drain and set aside.
2. Cook the Shrimp:
Pat shrimp dry and season with salt, pepper, and paprika or chili flakes.
In a large skillet, heat 1 tbsp olive oil + 2 tbsp butter over medium-high heat.
Add shrimp and cook 1–2 minutes per side until pink and just cooked. Remove and set aside.
3. Make the Garlic Butter Sauce:
In the same skillet, lower heat and add 4 tbsp butter.
Add minced garlic and sauté for about 30 seconds until fragrant (don’t let it brown).
Stir in broth and lemon juice. Simmer for 1–2 minutes to reduce slightly.
4. Combine & Finish:
Return shrimp and broccoli to the pan. Toss to coat everything in the garlic butter sauce.
Cook for another 1–2 minutes until warmed through.
Taste and adjust seasoning. Sprinkle with fresh parsley if using.
