Ingredients:
For the meatballs:
1 lb ground beef or ground pork (or a mix of both)
1/4 cup panko breadcrumbs
1/4 cup grated ginger
2 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon sesame oil
1 tablespoon gochujang (Korean chili paste)
1 tablespoon honey
1 egg
Salt and pepper to taste
For the spicy mayo dip:
1/4 cup mayonnaise
1 tablespoon gochujang
1 teaspoon rice vinegar
1 teaspoon honey
1 teaspoon sesame oil
1/2 teaspoon garlic powder
Directions:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, combine the ground meat, panko breadcrumbs, grated ginger, minced garlic, soy sauce, sesame oil, gochujang, honey, egg, salt, and pepper. Mix until well combined.
Form the mixture into 1-inch meatballs and place them on the prepared baking sheet.
Bake the meatballs in the preheated oven for 15-18 minutes, or until they are cooked through and golden brown.
While the meatballs are baking, prepare the spicy mayo dip. In a small bowl, mix together the mayonnaise, gochujang, rice vinegar, honey, sesame oil, and garlic powder until smooth and creamy.
Once the meatballs are done, serve them hot with the spicy mayo dip on the side.
