1 lb ground breakfast sausage
1 cup shredded cheddar or mozzarella cheese
2 cups pancake mix (plus water or milk per package directions)
Maple syrup, for serving (optional but highly recommended)
Butter, for cooking
Instructions
1. Cook the Sausage
In a skillet over medium heat, cook the ground sausage until fully browned, breaking it into small crumbles.
Drain excess grease and let it cool slightly.
2. Make the Pancake Batter
In a mixing bowl, prepare the pancake batter according to your pancake mix instructions.
Stir in the shredded cheese and cooked sausage until well combined.
3. Cook the Pancakes
Heat a nonstick skillet or griddle over medium heat and lightly butter it.
Pour about ¼ cup of batter for each pancake.
Cook 2–3 minutes until bubbles form on the surface, then flip and cook another 1–2 minutes until golden brown.
4. Stack & Serve
Stack pancakes high, drizzle with maple syrup, and serve warm.
