1 lb (450g) ground breakfast sausage (mild or spicy)

8 oz (226g) cream cheese, softened

1 can (10 oz/284g) Rotel diced tomatoes and green chilies, drained well

2 cups (200g) shredded cheddar cheese

1 3/4 cups (220g) all-purpose baking mix (e.g., Bisquick)

Step 1: Prepare the Sausage

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a skillet over medium heat, cook the sausage until fully browned and crumbled. Drain any excess grease and allow it to cool slightly.

Step 2: Combine Ingredients

In a large mixing bowl, combine the cooked sausage, softened cream cheese, drained Rotel, shredded cheddar cheese, and baking mix.

Mix well until all ingredients are evenly incorporated. (Tip: Using clean hands or a sturdy wooden spoon works best for thorough mixing.)

Step 3: Shape the Sausage Balls

Roll the mixture into 1-inch balls and place them on the prepared baking sheet, spaced about 1 inch apart.

Step 4: Bake

Bake in the preheated oven for 20-25 minutes or until golden brown and cooked through.

Remove from the oven and allow the sausage balls to cool slightly on the baking sheet before serving.
