4 Chicken Quarters washed and patted dry
▢1/2 cup Unsalted Butter room temperature
▢2-3 tablespoons Rosemary finely chopped
▢3-4 Garlic Cloves minced
▢2 teaspoons Smoked Paprika 2 teaspoons Salt
▢2 teaspoons Black Pepper
▢2 teaspoons Onion Powder
▢1.5 lbs. Baby Potatoes halved

Preheat your oven to 400 degrees. Line a baking sheet with parchment paper or aluminum foil for easier cleanup.
Rinse the chicken quarters under cold water and pat them dry with paper towels. Place them on the prepared baking sheet.
In a small bowl, mix together butter, rosemary, minced garlic, smoked paprika, salt, black pepper, and onion powder.
Coat chicken quarters with seasoned butter and place on baking sheet.
Add potatoes to the baking sheet and place in preheated oven. Place the baking sheet in the preheated oven and bake for about 50-60 minutes, or until the chicken is cooked through and the potatoes are tender, with crispy edges. Remember to flip the chicken quarters and stir the potatoes halfway through cooking to ensure even browning.
To check if the chicken is done, insert a meat thermometer into the thickest part of the meat. It should register at least 165 degrees
Once the chicken quarters and potatoes are cooked to perfection, remove them from the oven and let them rest for 5 minutes before serving. Garnish with additional fresh rosemary leaves if desired and enjoy your delicious rosemary garlic chicken quarters with roasted potatoes!
