Ingredients:

2 cups granulated sugar

1 cup water

1 cup cornstarch

1 teaspoon rose water (or to taste)

Optional: few drops red or pink food coloring

Powdered sugar (for dusting)

Extra cornstarch (for dusting)

1. Prepare the pan:
Line a small square dish (8×8-inch) with parchment paper. Lightly dust with a mix of powdered sugar and cornstarch.

2. Make the sugar syrup:

In a saucepan, combine the granulated sugar and ½ cup water.

Heat over medium heat, stirring until sugar dissolves.

Once it starts boiling, stop stirring and let it boil for about 10–15 minutes, until it reaches a soft-ball stage (240°F / 115°C on a candy thermometer).

Remove from heat and set aside.

3. Make the cornstarch gel:

In a separate pot, whisk together 1 cup cornstarch and ½ cup water until smooth.

Cook over medium heat, stirring constantly, until it thickens into a glue-like consistency.

4. Combine mixtures:

Slowly pour the hot sugar syrup into the cornstarch mixture, whisking constantly.

Cook over low heat, stirring continuously for 30–45 minutes, until the mixture becomes thick, gooey, and pale yellow.

Stir in rose water and food coloring (if using).

5. Set the delight:

Pour the mixture into the prepared dish and spread it evenly.

Let it sit uncovered at room temperature for at least 6 hours or overnight.

6. Cut and coat:

Once set, dust a clean surface with powdered sugar + cornstarch.

Turn out the Turkish Delight, cut into squares, and coat each piece well.
