Ingredients:
1 lb chicken sausage, sliced into rounds
2 cups broccoli florets
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 small red onion, sliced
1 zucchini, sliced into half-moons
2 tbsp olive oil
1 tsp garlic powder
1/2 tsp smoked paprika
1/2 tsp dried oregano
Salt & pepper to taste
Optional: grated Parmesan for serving
Optional: red pepper flakes for a kick
Instructions:
1. Preheat oven to 425°F (220°C). Line a large sheet pan with parchment paper or foil for easy cleanup.
2. Prep veggies & sausage:
In a large bowl, combine the sliced chicken sausage, broccoli, bell peppers, onion, and zucchini.
3. Season:
Drizzle with olive oil. Add garlic powder, paprika, oregano, salt, and pepper. Toss everything until evenly coated.
4. Spread & Roast:
Spread the mixture in a single layer on the prepared sheet pan.
Roast for 25–30 minutes, tossing halfway through, until veggies are tender and slightly browned, and sausage is caramelized.
5. Serve:
Sprinkle with Parmesan and red pepper flakes if desired. Serve as-is or over rice, quinoa, or pasta.
