1 pint fresh strawberries, hulled and sliced
1 tbsp honey
1 tsp balsamic vinegar
Pinch of salt
4–6 slices crusty bread, toasted

For the whipped ricotta
1 cup ricotta cheese
1 tbsp honey
1/2 tsp vanilla extract

1. Roast the strawberries
Preheat your oven to 400°F (200°C). In a bowl, toss the sliced strawberries with honey, balsamic vinegar, and a pinch of salt. Spread them on a parchment-lined baking tray and roast for 15–18 minutes, until juicy and caramelized.

2. Make the whipped ricotta
In a food processor or mixing bowl, combine ricotta cheese, honey, and vanilla extract. Whip until creamy and smooth (about 1–2 minutes). Set aside.

3. Toast the bread
Lightly toast your favorite rustic bread slices until golden.

4. Assemble the toast
Spread a generous layer of whipped ricotta onto each slice of toast. Top with roasted strawberries and drizzle with any leftover syrup from the baking tray.

5. Serve
Optional: Garnish with chopped fresh mint or basil. Serve immediately.
