Ingredients:

1½ lbs baby potatoes (halved or quartered if large)

1 lb smoked sausage or kielbasa, sliced into 1-inch pieces

1 red bell pepper, chopped

1 yellow bell pepper, chopped

1 small red onion, sliced

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika (smoked or sweet)

1 teaspoon Italian seasoning (or oregano)

Salt and pepper to taste

Fresh parsley for garnish (optional)

1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper or foil for easy cleanup.

2. Prep the veggies & sausage:

In a large bowl, combine potatoes, sausage, bell peppers, and onion.

Drizzle with olive oil and sprinkle with garlic powder, paprika, Italian seasoning, salt, and pepper. Toss everything to coat evenly.

 

3. Spread on baking sheet:

Arrange the mixture in a single layer on the prepared baking sheet. Make sure the potatoes are cut side down for crispier edges.

 

4. Roast:

Bake for 35–40 minutes, stirring once halfway through, until potatoes are golden and tender and sausage is slightly crispy.

 

5. Serve:

Garnish with chopped fresh parsley if desired and serve hot!
