Ingredients
1 standard box brownie mix
ingredients for preparing brownies as indicated on the box (typically 2 eggs, 3 tablespoons water, ½ cup vegetable oil)
16 ounces cream cheese, softened
⅔ cup granulated sugar
1 tablespoon all-purpose flour
1 teaspoon vanilla extract
¼ cup sour cream, room temperature
1¼ cups heavy whipping cream, divided into ¼ cup and 1 cup
2 large eggs, room temperature
3 tablespoons powdered sugar
½ cup hot fudge or chocolate sauce, for serving
Instructions:
1. Prepare the brownie base
Preheat your oven to 350°F (175°C). Line the bottom of a 9-inch springform pan with parchment paper and lightly grease the sides.
In a mixing bowl, combine the brownie mix with eggs, water, and oil as directed on the package. Pour the batter into the prepared pan and bake for about 20–25 minutes, or until a toothpick inserted into the center comes out mostly clean. Let it cool while preparing the cheesecake layer.
2. Make the cheesecake filling
In a large bowl, beat the softened cream cheese until smooth. Add granulated sugar and flour, and beat until fully combined. Mix in the vanilla extract and sour cream, then add ¼ cup of heavy whipping cream and continue mixing. Add the eggs one at a time, beating just until incorporated. Do not overmix.
3. Assemble and bake
Pour the cheesecake mixture over the cooled brownie layer. Smooth the top with a spatula.
Place the springform pan in a larger baking dish and fill the dish with about 1 inch of hot water (this creates a water bath to prevent cracking).
Bake at 325°F (163°C) for 50–60 minutes, or until the center is set but slightly jiggly.
Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour. Then remove from the oven and refrigerate for at least 4 hours or overnight.
4. Prepare the whipped topping
In a chilled mixing bowl, whip the remaining 1 cup of heavy cream with powdered sugar until stiff peaks form.
5. Serve
Once the cheesecake is fully chilled, remove it from the springform pan. Top with whipped cream and drizzle with hot fudge or chocolate sauce before serving.
Total Time: 6 hours (including chill time)
Servings: 10–12 slices
Pro tip: Add chocolate curls or shaved chocolate on top for an extra decadent finish!
