2 ribeye steaks (1-inch thick)

2 tbsp olive oil

2 cloves garlic, minced

Salt and freshly ground black pepper (to taste)

1 tsp fresh rosemary or thyme (optional)

Cheesy Scalloped Potatoes Ingredients:

2 lbs potatoes (Yukon gold or russet), thinly sliced

2 tbsp butter

2 cloves garlic, minced

2 tbsp all-purpose flour

1 ½ cups milk (whole preferred)

1 cup heavy cream

1 ½ cups shredded sharp cheddar cheese

½ cup grated Parmesan cheese

Salt and pepper (to taste)

Optional: ¼ tsp nutmeg, chopped chives or parsley for garnish

1. Prep the Scalloped Potatoes (start first):

1. Preheat oven to 375°F (190°C).

2. In a saucepan over medium heat, melt 2 tbsp butter. Add garlic and sauté for 1 minute.

3. Stir in flour to make a roux; cook for 1 minute.

4. Slowly whisk in the milk and cream, stirring constantly until slightly thickened (about 3–5 minutes).

5. Remove from heat and stir in cheddar, Parmesan, salt, pepper, and nutmeg if using.

6. Layer half the potatoes in a greased 9×13-inch baking dish. Pour half the cheese sauce over the top. Repeat with remaining potatoes and sauce.

7. Cover with foil and bake for 30 minutes, then uncover and bake another 25–30 minutes, or until golden brown and bubbly. Let rest 10 minutes before serving.

2. Cook the Ribeye Steaks:

1. Remove steaks from the fridge 30 minutes before cooking. Pat dry and season both sides with salt, pepper, garlic, and herbs.

2. Heat a cast-iron skillet or heavy pan over high heat until very hot.

3. Add olive oil, then carefully place the steaks in the pan. Sear for about 2–3 minutes per side for medium-rare (adjust for thickness and doneness preference).

4. In the last minute, reduce heat to medium and add butter. Spoon the melted butter over the steaks while they finish cooking (basting).

5. Transfer steaks to a plate and let rest for 5–10 minutes before serving.

To Serve:

Plate a generous scoop of cheesy scalloped potatoes beside a juicy ribeye. Garnish with fresh herbs like chives or parsley if desired.
