1 lb pork tenderloin, thinly sliced
2 tbsp vegetable oil
1 red bell pepper, sliced
1/2 cup broccoli florets
1/2 cup carrots, sliced
1/4 cup green beans, chopped
1/2 cup pineapple chunks (fresh or canned)
2 cloves garlic, minced
2 tbsp soy sauce
1 tbsp hoisin sauce
1 tbsp rice vinegar
1 tsp sesame oil
1 tbsp cornstarch (optional, to thicken sauce)
2 green onions, chopped (for garnish)

In a large skillet or wok, heat vegetable oil over medium-high heat. Add the sliced pork and stir-fry for 3-4 minutes, or until browned and cooked through. Remove pork from the skillet and set aside.
In the same skillet, add more oil if needed. Add the red bell pepper, broccoli, carrots, and green beans. Stir-fry for 3-4 minutes until vegetables are tender but still crisp.
Add the pineapple chunks and minced garlic, cooking for another 2 minutes.
In a small bowl, mix together the soy sauce, hoisin sauce, rice vinegar, sesame oil, and cornstarch (if using). Pour this sauce over the stir-fry and stir to coat.
Return the cooked pork to the skillet and toss everything together to combine. Cook for another 1-2 minutes until everything is heated through and the sauce has thickened.
️ Garnish with chopped green onions before serving.
