1 (3.4 oz) box instant vanilla pudding mix

1 (20 oz) can crushed pineapple (do not drain)

1 (8 oz) tub Cool Whip (whipped topping), thawed

Optional toppings: pineapple chunks, whipped cream, crushed graham crackers or toasted coconut

1. Mix the pudding and pineapple:

In a large mixing bowl, combine the instant vanilla pudding mix with the entire can of crushed pineapple, juice and all.

Stir until well combined and the mixture starts to thicken slightly.

2. Fold in the Cool Whip:

Gently fold the thawed Cool Whip into the pineapple mixture until light and fluffy. Avoid overmixing to keep the texture airy.

3. Chill:

Cover and refrigerate for at least 1 hour to allow the flavors to blend and the fluff to set.

4. Serve and garnish:

Spoon into serving bowls and top with pineapple chunks, a dollop of whipped cream, and a sprinkle of crushed graham crackers or toasted coconut, if desired.

Tips:

For extra texture, add mini marshmallows, chopped pecans, or shredded coconut to the mix.
