Ingredients:
1 lb baby potatoes, halved or quartered
8 oz green beans, trimmed
1 small yellow onion, sliced into wedges (about 1 cup)
1 lb pre-cooked andouille sausage or kielbasa, sliced on the bias
1/4 cup olive oil
1 tsp garlic powder
1 tsp salt
1 tsp Italian seasoning
1/2 tsp ground black pepper
Instructions:
1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it2. Prep the potatoes: In a large bowl, toss the potatoes with half of the olive oil (2 tablespoons), half the seasoning (1/2 tsp garlic powder, 1/2 tsp salt, 1/2 tsp Italian seasoning, and a pinch of pepper). Spread them on the baking sheet and roast for 15–20 minutes, flipping once halfway through.
3. Add remaining ingredients: While potatoes roast, toss green beans, onions, and sausage slices with the remaining olive oil and seasonings.
4. Combine on sheet pan: After the first 15–20 minutes, remove potatoes from the oven, add the green beans, onions, and sausage to the pan. Stir everything gently to combine.
5. Roast again: Return to oven and roast for an additional 20–25 minutes, or until potatoes are fork-tender and sausage is browned.
6. Serve warm with optional hot sauce, Dijon mustard, or a sprinkle of parmesan cheese.
