Ingredients:

1 cup cottage cheese

¼ cup canned pineapple chunks, drained

2 tablespoons shredded coconut (unsweetened or sweetened based on preference)

1 tablespoon chia seeds

1–2 tablespoons honey (adjust to taste)

1. Blend for Smooth Texture (Optional but recommended):
Add the cottage cheese, pineapple chunks, and honey to a blender or food processor. Blend until smooth and creamy.

2. Stir in Texture Add-ins:
Transfer the blended mixture to a bowl. Stir in the shredded coconut and chia seeds.

3. Chill:
Cover and refrigerate for at least 30–60 minutes (or overnight) to allow the chia seeds to expand and the pudding to thicken.
