1 cup unsweetened applesauce

½ cup vegetable oil (or melted coconut oil)
2 large eggs

1 tsp vanilla extract
Instructions:
1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment.
2. In a large bowl, whisk together sugar, oil, eggs, applesauce, and vanilla until smooth.
3. In another bowl, combine flour, baking soda, baking powder, and spices.
4. Gradually mix the dry ingredients into the wet ingredients until just combined—don’t overmix.
5. Pour batter into the loaf pan and smooth the top.
6. Bake for 50–60 minutes, or until a toothpick comes out clean.
7. Cool in the pan for 10 minutes, then transfer to a wire rack.
