Make Ginger-Mint Base: In a small saucepan, combine grated ginger, mint leaves, and 1 cup water. Bring to a simmer for about 3–4 minutes. Remove from heat and let steep for 5–10 minutes. Strain out the solids and set aside to cool.
Mix Lemonade: In a large pitcher, combine the lemon juice and honey (or sugar). Stir well until dissolved. Add the cooled ginger-mint infusion and the remaining 2 1/2 cups cold water (or sparkling water for a bubbly version). Stir thoroughly. Taste and adjust sweetness or tartness if needed.
